#ChewOnIt: Don’t be chicken — Cook the whole thing!

When I cook a whole chicken, it’s almost always met with admiration and awe. This perplexes me. It’s like the conveniently-sized and delicious fowl has become somewhat exotic when served in one piece.
My hope is that by sharing a few tasty recipes that make the most out of a whole chicken, it will begin to change this strange phenomenon. And while I admit on the front end that some of the recipes may seem a bit daunting the first time around, I promise they’ll get easier every time you make them.
Also, I encourage you to consider buying organic and free-range birds whenever you can afford to. The bird will definitely cost more than a “traditional” chicken, but the health benefits and flavor cannot be compared…
